When was the last time a restaurant in Dallas roasted an entire suckling pig? We can't recall. And lest you think this is some sort of Lord of the Flies scenario, take heart. It's just the Moth, going all out. For this beer dinner, the restaurant hosts Garrett Morerro of Maui Brewing Company, which produces beers with cutesy surf-inspired names like "Bikini Blonde" and "Big Swell IPA." The good news is that they're also delicious.
Menu:
First: Ahi tuna poke with Macadamia nuts, ginger, and scallions/Big Swell IPA
Second: Lomi Lomi salmon with Ugly Ripe tomatoes and sweet onions/Wheat Wine
Third: Huli Huli grilled chicken over bean thread noodles/Westside ESB
Fourth: Kalua suckling pig with Okinawa sweet potatoes, roast pineapple/Double Overhead IPA
Fifth: Haupia (coconut custard and guava cake)/Imperial coconut porter
